Dough
Pick one Β· make firstPrep
- Chicken. Use any roasted chicken: leftover or rotisserie. Dice or shred it and toss it with a spoonful of the curry sauce so it doesnβt dry out in the oven.
- Tomatoes. Slice them, scoop out the seeds and pat the slices dry, or their juice pools in the middle of the pizza.
- Pepper and onion. Slice both thin. The pepper stays crisp through the short bake.
Build
- Stretch the dough ball to about 14 inches.
- Top in this order:
- Curry sauce, spread thin, leaving the rim bare. A thick sauce works best; a thin one makes the middle soggy.
- Mozzarella.
- Chicken.
- Yellow pepper, tomato and red onion.
- Optional: mascarpone in small dollops spread around the pizza. It melts into creamy pools that go well with the curry.
Bake: home oven
- Preheat at the ovenβs max (500β550Β°F) for 45β60 minutes with a baking steel or stone on the top rack.
- Bake 7β9 minutes, until the bottom is browned and the cheese is bubbling.
Bake: outdoor oven
- Preheat to about 650Β°F on the stone, checked with an infrared thermometer.
- Bake 2β3 minutes, turning the pizza every 20β30 seconds.
- Done when the rim is browned and the cheese is bubbling.
Finish
Lay thin lime slices over the top, then scatter torn basil and chopped cilantro. Squeeze a slice over a piece before eating if you want more lime.
